Clubapalooza is the union of 4 of New Orleans' most sophisticated and prestigious clubs. For those in the "know", LC, BC, PC, and SC. I was hired by Mr. Arvinder Vilkhu of Saffron Caterers, in Gretna, LA. (Check them out at www.saffron-caterers.com .) I was ecstatic because Arvinder asked me to roast a Cochon de Lait for the group. Then as we talked, he asked if I would supply all of the food, what a fantastic honor!!!
The event was the culmination of a highly competitive golf tourney!! (I heard that one guy won the Longest Drive with a stroke of over 500 yards, WOW!!)
HEY, Ya know after a hard day at the links, ya gotta have some South Louisiana Cajun food!
Well we did our Throwdown Jambalaya, Pork Stuffed Cochon de Lait, Homestyle Potato Salad, Country Coleslaw and Mixed Berry Cobbler. (BTW, Arvinder promised that he would give me his recipe for the cobbler, lets not talk about mine!)
One of the attendees got a little demanding about me carving the pig!!
Now, that was a PARTY!!
