International School of Louisiana

ISL School Fair  -  Alligator Sauce Piquant Demo

October 26, 2008Tutti

Ms. Tutti Horvitz did a GREAT job in setting up for the demo, she had to get all of the recipe items on the table and in the correct order that I was going to add them to the Piquant!! Well, except for the wine which I needed first!Bart Colosino, Myself and Ms. Tutti Horvitz at the ISL Demo!

Also helping was Mr. Bart Colosino he made sure that the Alligator sausage did not burn!

A nice crowd gathered, several people took notes, and we started. (Notice my cup of wine!)Alligator Sauce Piquante

If you would like the recipe for Alligator Sauce Piquant, just click here!!

In the  picture on the right, we have just added the onions, celery, bell peppers, tomatoes and seasonings.  Now they all have to cook down.  Since I am using one of my jet burners, it only took 30 minutes to simmer.  And, in just a little under 45 minutes we had prepared a fantastic pot of Alligator Sauce Piquante ready for service!!

Mr. Bart Colosino keeps the pot stirred!Bart did a great job, he stayed on top of the pot for the entire time.  You gotta do this with such high heat!  We were using my Jambalaya Rig so I wasn't too concerned!!

Tutti got a little carried away about the Sauce Piquant!!   I think she liked it!!

We then packed up everything, Ann and I zipped over to the Children's Hospital's Boo at the Zoo donation!!!

Two in one day!! WOW!
