Rustons Peach Salsa
Yield about 1 & 1/2 Quarts
1 QUART RUSTON LOUISIANA PEACHES (Peeled, pitted then chopped into 3/8 in cubes)
1 LARGE BELL PEPPER (Chopped)
1 LARGE RED BELL PEPPER (Chopped)
1/2 TBSP GROUND CHILI POWDER
1 TSP CUMIN
1/2 LB CUCUMBER (Peeled, de-seeded the chopped in to 1/4 inch cubes)
1/2 CUP PIMENTOS
1 BUNCH SHALLOTS (Chopped)
1 LB ANAHEIM PEPPERS (Roasted, peeled and chopped fine)
1/2 CUP HONEY
1/3 CUP LIME JUICE
1 BUNCH FRESH CILANTRO (Chopped)
1/4 CUP GOLD TEQUILA
In a large stainless steel mixing bowl, combine all ingredients. Cover with film and chill overnight, stirring once or twice.
Serve with grilled fish or chicken.
Ruston is in North Central Louisiana and is internationally known for their peaches.
