Tarragon and Garlic Vinegar
Yield - 750 ml Wine Bottle

Ingredients

750 ML RICE WINE VINEGAR
1 POD FRESH GARLIC (Peeled)
4 SPRIGS FRESH TARRAGON

Method
Heat the vinegar in the microwave for 1 minute. Wash the garlic and tarragon under cold water and add to the vinegar, cork and allow to cool to room temperature. The vinegar will require about 10 days to absorb the flavors of the seasonings.

Plate Presentation
Use a stainless steel liquor spout (available at all restaurant and bar supply houses) to dispense the vinegar.


Chef's Notes:
This is a base vinegar and should be available to every chef.
