"ORIGINAL" Sazerac Cocktail

 Ingredients

1/2 TSP HERBSAINT ORIGINAL (See Chef Notes below)
1 TSP SIMPLE SYRUP
3- 4 DASHES PEYCHAUD BITTERS
 
1 -1/2 OZ RYE WHISKEY
STRIP LEMON PEEL (Curled)

Method

Pre-chill or freeze an Old Fashion glass, add Herbsaint, ring glass and discard extra.

In a Boston Shaker add simple syrup, Peychaud bitters and rye whiskey.  Fill the shaker about half way with ice.  Lightly Shake for 10 seconds!

Strain into the Old Fashion glass,  Twist lemon peel into a curl, ring glass with peel, garnish with peel and serve. 

Chef's Notes:
Sazerac is now distilling two forms of Herbsaint, one with a silver label. AND one with the "Original" label. FIND, the Original, it is FAR SUPERIOR to the silver labeled one!! Use the silver labeled one for cooking Oysters Herbsaint!

IF you are serving many of these drinks, pour about one ounce of Herbsaint into a glass, pour that into your serving glass, ring that glass, then pour the remaining back into the first glass.  I that way you won't be wasting a lot of expensive alcohol.
