Baked Pork & Beans
Yield - about 1 Gallon
Ingredients
1/2 LB BACON
1/2 CUP DICED ONIONS
1 #10 CAN PORK AND BEANS
3/4 LB BROWN SUGAR
1 TBSP GRANULATED GARLIC
1/4 TSP LIQUID SMOKE
1/4 CUP CREOLE MUSTARD
2 TBSP YELLOW MUSTARD
Method
Cut bacon into 1/4 inch pieces. Place the bacon and onions in a large Dutch oven over
medium heat, and cook until the onions are clear. (Do not brown bacon.) Add all remaining
ingredients, cover and bake at 375F for 45 minutes.
Alternate Method
3/4 LB SLICED BUFFET HAM SLICES (Cut into 1/4" cubes)
Substitute the bacon for buffet ham. This will add a slightly smoky flavor.
Plate Presentation
Serve in the Dutch oven or a 2 hotel pan.
Chef's Notes:
When you are BBQing, put the Dutch oven on the back of pit and let the natural heat and
smoke bake the beans.
