Baked Pork & Beans
Yield - about 1 Gallon
1/2 LB BACON
1/2 CUP DICED ONIONS
1 #10 CAN PORK AND BEANS
3/4 LB BROWN SUGAR
1 TBSP GRANULATED GARLIC
1/4 TSP LIQUID SMOKE
1/4 CUP CREOLE MUSTARD
2 TBSP YELLOW MUSTARD
Cut bacon into 1/4 inch pieces. Place the bacon and onions in a large Dutch oven over medium heat, and cook until the onions are clear. (Do not brown bacon.) Add all remaining ingredients, cover and bake at 375F for 45 minutes.
3/4 LB SLICED BUFFET HAM SLICES (Cut into 1/4" cubes)
Substitute the bacon for buffet ham. This will add a slightly smoky flavor.
Serve in the Dutch oven or a 2 hotel pan.
When you are BBQing, put the Dutch oven on the back of pit and let the natural heat and smoke bake the beans.
