Tossed Salad!

Antipasta Salad
Virgin olive oil, herbs and spices are the basic marinade for celery, cheese,
pepperoni and other ingredients. The salad is served over a bed of iceberg
lettuce.

Asparagus Spears with Dried Tomatoes
We marinate fresh pencil asparagus in a rich chicken broth then blanch the
spears in seasoned stock. The stalks are arranged on a bed of romaine
lettuce and are garnished with olive oil soaked dried tomatoes and sprinkled
with sesame seeds.

Blackened Chicken Salad
Our house seasonings are used to blacken fresh chicken breast in clarified
butter. We chill the breast, slice them into fingers and serve them over a bed
of crisp red leaf lettuce and fresh spinach. The salad is topped with our
tarragon vinaigrette dressing and homemade croutons.

Caesar Salad
Fresh crisp Romaine lettuce is tossed with a dressing made of:
olive oil, egg yolks, garlic, Dijon mustard, and anchovies topped with
homemade croutons and parmesan cheese.

Champignons ala Grecque
Mushroom crowns marinated with herbed virgin olive oil,
Pickled baby red onions, rice wine vinegar, and fresh lime juice;
Served over crushed ice.

Classic Chef Salad
Our Chef Salad is constructed with mounds of iceberg lettuce, tomatoes, and
dill pickles. Then topped with slow roasted beef, white turkey breast slices,
honey cured ham slices and cheddar cheese. You can select Thousand Island,
Ranch or French dressings.

Coeur's d`Artichants, Palmier and Asperges
Marinated hearts of artichokes and palms with;
White asparagus and pimentos in a herbed wine vinaigrette.

Cold Pasta Salad
Rainbow Rotini pasta is boiled "al dente" then chilled and mixed with crisp
celery, carrots, and mild Cajun peppers to make this pasta salad special.

Crudite Display
Red, green and golden bell peppers highlight,
crisp garden greens of broccoli flowers, zucchini canapés,
cauliflower buds and additional seasonal vegetables.
Assorted dips and dressings complete the display!

Fresh Fruit and Vegetable Display
Fresh fruits and garden vegetables are sliced and prepared with dips, crackers,
and relish. The highlight of the display is a uniquely carved watermelon.

Fresh Fruit Compote
Oranges, apples, and cantaloupes are sliced off the rind then added to our
compote of brandy and selected liqueurs and seasonal fruit.

Hawaiian Fruit Salad
Bananas, papayas, and shredded coconut are smothered in ginger syrup flavored
lime juice. Of course, we won't forget the pineapples.

Lettuce Wedge
The Classic Salad - A quarter head of crisp, fresh lettuce, chilled almost to
freezing and served with your choice of dressing.

Mardi Gras Salad with Ranch Dressing
Purple, Green, and Gold rule with purple cabbage, green cucumbers, and golden
carrot shavings, our cool ranch dressing is the perfect topping for our
colorful salad.

Salad Bar with Choice of Dressings
Our salad bar is stocked with iceberg lettuce, tomatoes, cucumber slices,
bell peppers, cabbage, carrots, celery sticks, and other fresh garden greens.
We serve an assortment of homestyle dressings for your custom built salad.

Salade` Epinards
Stemmed leaf spinach tossed with; farm raised hen eggs, plum tomatoes,
Custom's croutons, and bacon bits. Topped with our hot honey-mustard and
bacon dressing!

Shrimp and Pasta Salad
We use only fresh gulf shrimp then boil them with spicy Cajun seasonings
the shrimp are peeled, chilled and coarsely chopped then folded with rainbow
rotini pasta and our seasoned mayo dressing.

Spinach Salad with Basil Vinaigrette Dressing
We use fresh garden spinach, hard boiled eggs, bacon, and tomatoes then top the
salad with our homemade basil vinaigrette dressing.

Spinach Salad with Honey Mustard Dressing
We use fresh garden spinach, hard boiled eggs, bacon, and tomatoes then mix
sweet honey and Creole mustard to dress this mouth watering salad.

Sugar Beet and Onion Salad
Sugar beets and fresh onion rings are tossed with our Red Wine Vinaigrette
Aux Fines Herbs. This classic salad is presented with sprinkles of fresh
shallots and parsley.
White Wine goes great with a salad!
Sweet Bell Pepper Salad
Bell pepper rings, tomatoes, shallots and parsley are combined with our
extra virgin olive oil and red wine vinegar dressing. This is our favorite
Middle Eastern influenced salad.

Tossed Green Salad with Dressing Selection
Fresh green lettuce, cucumbers, golden carrot shavings, purple cabbage, and our
crispy croutons, with your choice of dressing is the perfect topping for our
colorful salad.
