*"Roast Suckling Pig" (Award Winning) :
1988 Third Place, State of Louisiana Bar-B-Que Championship, Whole Hog Division and Fourth Place in the Pork Ribs Division
First we start with our own dry rub seasonings, and stuff the pig with fresh garlic toes an shallots. Then we slow smoke-roast our pigs in our 1/2 thick steel Bar-B-Que pit for 14 - 16 hours. Our choice of woods for smoking is pecan, however, you may choose you personal favorite.

Cajun Dancers demonstrating The Cajun Waltz, The Traditional Two-Step, Jitterbugging The Cajun Four Hand (Two Couples) and the Troika (Group of Three). Be careful because they'll have you dancing TOO!!!
