Smoked Garlic Butter
Yield 1 -1/8 Pounds
1/4 CUP SMOKE/ROASTED GARLIC PURÉE (See recipe)
1 LB UNSALTED BUTTER
1 TBSP FINELY CHOPPED CILANTRO (Optional)
5 -4 OZ CHILLED MONKEY DISHES
Remove purée and butter from refrigeration (about one hour), and allow both to assume room temperature. (Do not allow butter to melt and separate).
In a medium sized mixing bowl, whisk butter and smoked garlic purée until well blended.
Spoon smoked garlic butter into monkey dishes and chill. Top with minced cilantro (optional).
The quantity for garlic is highly subjective, garlic's strength can change from season to season and supplier to supplier. Use a quarter of a cup as a starting point then modify to personal taste
